- 1/2 cup roasted pepitas
- 1/2 cup pomegranate seeds
- 1/2 cup crumbled feta cheese
- 1 5.3 oz. container Pomegranate Greek Yogurt
- 3 tablespoons Asian Sweet Chili Sauce
- 3 tablespoons pomegranate juice
- 2 tablespoons mayonnaise
- 1–2 tablespoons apple cider vinegar
- 1 tablespoon lemon juice
- 1 tablespoon poppy seeds (optional)
- 1/4 teaspoon salt
Instructions
- In a mixing bowl, whisk together Greek yogurt, sweet chili sauce, pomegranate juice, mayonnaise, vinegar, lemon juice, poppy seeds (optional), and salt for the dressing. Chill in the refrigerator.
- In a large bowl, combine spring salad mix, sliced pears, cucumber, bell pepper, onion, pepitas, pomegranate seeds, and crumbled cheese.
