  • 1 cup chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (180°C) and line cookie sheets with parchment paper.
  2. In a large bowl, beat together softened butter, brown sugar, granulated sugar, and peanut butter until creamy.
  3. Mix in the egg and vanilla extract until fully incorporated.
  4. Gradually add flour, baking powder, baking soda, and salt; mix until just combined.
  5. Stir in oats and fold in chocolate chips (reserve some for topping).
  6. Using a cookie scoop or spoon, shape dough into balls (about 3 tablespoons each). Chill for about 30 minutes if too sticky.
  7. Place on lined sheets about 2 inches apart and bake for 10-12 minutes or until set but still soft.
  8. Cool on the sheets for at least 10 minutes before transferring to a wire rack.
