  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 6 cups chicken or vegetable broth
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 cup ditalini pasta
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Remove sausage and sauté onion, carrots, and celery in the same pot until softened.
  3. Stir in garlic, oregano, basil, and optional red pepper flakes; cook for 1 minute.
  4. Add chicken or vegetable broth and crushed tomatoes; return sausage to the pot if using.
  5. Stir in cannellini and kidney beans; bring to a boil then simmer for 15 minutes.
  6. Add ditalini pasta and cook according to package instructions until al dente.
  7. Season with salt and pepper to taste before serving hot with fresh parsley on top.
