  • 1/4 cup unsalted butter (softened to room temperature)
  • 4 cups all-purpose flour (plus extra for rolling and shaping)
  • 2 teaspoons sea salt
  • 1 bar dark chocolate (semi-sweet or bittersweet)
  • 2 tablespoons all-purpose flour
  • 1 tablespoon brown sugar
  • 1 and 1/2 cups unsalted butter (softened for laminating)
  • 2 tablespoons whole milk for brushing
  • 1 large egg for topping
  • Powdered sugar for a light dusting at the end

Instructions

  1. In a stand mixer, combine yeast and warm milk; let sit until frothy.
  2. In another bowl, whisk together flour, sugar, cinnamon, and salt; add to yeast mixture gradually.
  3. Mix in softened butter and knead until smooth; cover and let rise until doubled.
  4. Shape softened butter into a rectangle between parchment paper; chill.
  5. Roll out dough into a rectangle, place chilled butter layer on top, fold over dough.
  6. Roll out again and fold for layers; repeat two more times.
  7. Cut dough into triangles, add chocolate at the wide end, roll tightly.
  8. Place on baking sheets to rise again until puffy.
  9. Bake at 400°F (200°C) for about 20 minutes until golden brown.
