  • 4 chicken drumsticks (bone-in)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 ½ cups rice (uncooked)
  • 1 ½ cups chicken stock
  • 1 ¼ cups water
  • 2 tablespoons butter (cut into pieces)
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¾ teaspoon salt
  • Black pepper to taste

Instructions

  1. Preheat your oven to 350°F.
  2. Spread chopped onions evenly in a baking dish and scatter butter pieces on top. Bake for 15 minutes until onions start to brown.
  3. Mix dried thyme, garlic powder, paprika, onion powder, salt, and black pepper in a bowl. Coat the chicken drumsticks with this rub.
  4. Remove the baking dish from the oven and layer uncooked rice over the onions. Pour in chicken stock and water; add minced garlic and stir.
  5. Place seasoned chicken on top of the rice mixture. Cover with aluminum foil and bake for 30 minutes.
  6. Remove foil and spray oil over chicken; bake for an additional 15 minutes or until browned.
