  • 5 tbsp unsalted butter
  • 1 (10-oz) bag mini vegan marshmallows
  • 6 cups Rice Krispies cereal
  • 12 Oreos, crushed (for the base)
  • 24 whole Oreos (for topping)
  • 1/3 cup semisweet chocolate chips
  • 1/3 cup white chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Line a 9"x13" pan with parchment paper and lightly grease it with cooking spray.
  2. In two microwave-safe bowls, melt semi-sweet chocolate and white chocolate separately by combining each with ½ teaspoon of coconut oil until smooth.
  3. In a large pot over medium-low heat, melt the butter and stir in the mini vegan marshmallows along with a pinch of salt until completely melted.
  4. Remove from heat and mix in Rice Krispies and half of the crushed Oreos until well-combined.
  5. Press half of this mixture into an even layer in the prepared pan. Top with whole Oreos, then spread the remaining mixture evenly on top.
  6. Finish by sprinkling remaining crushed Oreos and drizzling both types of melted chocolate over everything.
  7. Allow to set at room temperature for about 15 minutes before cutting into squares.
