  • 1 cup white Basmati rice
  • 2 tablespoons olive oil
  • 6 strands of saffron
  • 1 white onion (finely chopped)
  • 1 garlic clove (minced)
  • ½ cup mixed dried fruits (such as apricots, raisins, cherries)
  • ¼ cup toasted almonds (chopped)
  • ¼ cup toasted pistachios (chopped)
  • ¼ cup boiling water (for saffron infusion)
  • 1 ¼ cups water
  • 1 teaspoon ground coriander
  • ½ teaspoon ground fennel
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground cardamom
  • Salt and pepper (to taste)

Instructions

  1. Steep saffron strands in boiling water for 10 minutes.
  2. Rinse Basmati rice under cold water until clear.
  3. In a saucepan, heat olive oil over medium-low heat and sauté onions until translucent.
  4. Add garlic and spices, cooking until fragrant.
  5. Stir in rinsed rice and coat with spices for 3 minutes.
  6. Pour in saffron water and additional water; season with salt and pepper. Bring to boil, then simmer covered for 15-18 minutes.
  7. Once cooked, leave covered for 10 minutes before adding dried fruits on top.
  8. Fluff with a fork and mix in toasted nuts before serving.
