  • 1 cup onion, chopped
  • 1 cup celery, chopped
  • 1 cup carrot, chopped
  • 1 tablespoon garlic, minced
  • 1 tablespoon Italian seasoning
  • 3 cans beef broth (14.5 ounces each)
  • 1 can diced tomatoes (14.5 ounces)
  • 1 can tomato sauce (8 ounces)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup ditalini pasta
  • 1 can kidney beans (15.5 ounces), rinsed and drained
  • 1 can cannellini beans (15.5 ounces), rinsed and drained

Instructions

  1. Chop the onion, celery, carrots, and garlic. Rinse the kidney and cannellini beans.
  2. In a large pot or Dutch oven over medium-high heat, brown the ground beef until fully cooked. Drain excess fat if necessary.
  3. Add the chopped vegetables to the pot and sauté for about five minutes until they soften.
  4. Stir in the garlic and Italian seasoning; cook for an additional two minutes.
  5. Pour in the beef broth, diced tomatoes, tomato sauce, salt, pepper, and ditalini pasta. Bring to a boil.
  6. Reduce heat to medium-low and simmer for about seven minutes. Then add the rinsed beans and continue cooking until the pasta is tender (about five to eight more minutes).
