  • 1/3 cup balsamic vinegar
  • 2 Tbsp. honey
  • 8 oz. grape tomatoes, halved
  • 8 oz. fresh mozzarella balls
  • 2 Tbsp. avocado oil
  • 2 garlic cloves, minced
  • 1 tsp. Italian seasoning
  • 2 Tbsp. Dijon mustard
  • Kosher salt and fresh black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, honey, avocado oil, minced garlic, Italian seasoning, salt, and pepper.
  3. In another bowl, combine halved grape tomatoes, mozzarella balls, chopped basil, salt, and pepper.
  4. Heat avocado oil in an oven-safe skillet over medium-high heat and sear the seasoned chicken for 1-2 minutes on each side until golden brown.
  5. Pour the balsamic sauce over the chicken and let it simmer briefly.
  6. Top with tomato-mozzarella mixture.
  7. Bake uncovered for 18-23 minutes until the chicken reaches an internal temperature of 165°F (75°C). Let it rest for 5 minutes before serving.
