  • 3 tbsp brown sugar
  • 2/3 cup pineapple juice
  • 1 1/4 cup chicken broth
  • 3/4 tsp ginger (powdered)
  • 1/2 tsp red pepper flakes
  • 1 bell pepper (cut into chunks)
  • 2 cups pineapple (tidbits or chunks)
  • 2 tbsp cornstarch

Instructions

  1. Select the sauté function on your Ninja Foodi. Heat olive oil, then add diced onion and sauté until soft (about 3 minutes). Incorporate chicken pieces until no longer pink.
  2. Add minced garlic, ginger powder, red pepper flakes, and salt; stir to combine.
  3. Pour in soy sauce, brown sugar, pineapple juice, and chicken broth; mix well.
  4. Gently fold in pineapple chunks and bell pepper.
  5. Secure the lid and set to pressure cook on high for 6 minutes; perform a quick release when done.
  6. Switch back to sauté mode, whisk cornstarch with water until smooth, then stir into the pot until sauce thickens.
