- 1 small onion
- 16 ounces cremini mushrooms
- 3 cloves garlic
- ½ cup raw walnuts
- 1 ¼ cups cooked pearled barley
- 1 cup cooked pinto or black beans
- ½ cup panko breadcrumbs
- Vegan Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 teaspoon fine sea salt
- Black pepper
Instructions
- Cook onions and mushrooms in a sauté pan until moisture evaporates; add garlic and seasonings.
- Preheat oven to 400°F and prepare a baking sheet.
- In a food processor, combine walnuts, sautéed mixture, barley, beans, nutritional yeast, Worcestershire sauce, breadcrumbs, salt & pepper; pulse to mix.
- Form mixture into patties (about 8).
- Bake for 30-35 minutes, flipping halfway through.
