Instructions
- Preheat oven to 350°F (175°C) and line a 9×5 loaf pan with parchment paper.
- In a large bowl, mix together the shredded zucchini, eggs, vegetable oil, Greek yogurt, and vanilla until well combined.
- In another bowl, whisk together the flour, sugar, baking powder, salt, and spices.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- For the cinnamon sugar swirl: combine granulated sugar and cinnamon in a small bowl.
- Pour half of the batter into the prepared pan, sprinkle with half of the cinnamon sugar mix, add remaining batter, then top with remaining cinnamon sugar. Swirl gently with a knife.
