  • ¼ cup granulated sugar
  • ¾ cup water
  • 8 small-to-medium fresh strawberries (hulled and dried)
  • 1 cup sweet red bean paste or whipped vanilla cream
  • ½ cup potato starch or cornstarch (for dusting)

Instructions

  1. Prep strawberries by washing, hulling, and drying them thoroughly.
  2. Wrap each strawberry in sweet red bean paste or whipped vanilla cream; chill briefly.
  3. Combine mochiko, sugar, salt, and water in a bowl; microwave for 2½ to 3½ minutes until glossy and stretchy.
  4. Cool the dough slightly on a starchy surface; divide into eight pieces and flatten into circles.
  5. Place each stuffed strawberry on the dough circle; fold over and seal well.
  6. Allow mochi to rest for about 10 minutes before serving at room temperature.
