Ingredients
- 4 2/3 cups Rice Krispies Cereal
- 4 tablespoons salted butter
- 10 ounces vegan marshmallows
- 1 teaspoon peppermint extract
- Green food coloring (about 10 drops)
- 3/4 cup mini chocolate chips
Instructions
- Grease an 8-inch baking pan.
- In a medium-large saucepan over low heat, melt the butter and then add vegan marshmallows, stirring until fully melted.
- Mix in peppermint extract and food coloring until well combined.
- Pour the melted mixture over Rice Krispies Cereal in a large bowl and gently toss to coat evenly.
- After letting it cool for 5 minutes, stir in most of the mini chocolate chips, reserving some for topping.
- Transfer the mixture into the greased pan, pressing down firmly. Sprinkle reserved chocolate chips on top.
- Allow to cool at room temperature for at least 30 minutes before slicing into squares.
