  • ⅓ cup black olives (Kalamata)
  • ⅓ cup green olives
  • ¼ cup fresh parsley, chopped
  • ¼ cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Blanch the cauliflower florets in boiling water for 1-2 minutes until tender-crisp. Immediately transfer to an ice bath to preserve color.
  2. In a large mixing bowl, combine the blanched cauliflower with cherry tomatoes, red onions, olives, and parsley.
  3. In a small bowl, whisk together olive oil, red apple vinegar, Dijon mustard, minced garlic, oregano, basil, salt, black pepper, and optional red pepper flakes.
  4. Pour the dressing over the salad mixture and toss well to coat evenly. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
