- 1 lb boneless skinless chicken breast
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 garlic cloves, minced
- 1 cup Persian cucumbers
- 1 cup cherry tomatoes
- 1/2 cup tzatziki sauce
- 8 whole wheat pitas
- 2 tsp oregano
- 1/2 tsp paprika
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 cup red bell pepper, chopped
- 1/4 cup red onion, diced
- 2 tbsp parsley (or mint, basil, dill)
- 1 lemon (juice)
- Salt and pepper to taste
Instructions
- Marinate the chicken by mixing olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper in a bowl. Add chicken chunks and let marinate for at least 15 minutes.
- Prepare the salsa by combining chopped cucumbers, cherry tomatoes, red onion, parsley (or herbs), feta cheese, lemon juice, salt, and pepper in a separate bowl.
- Heat a skillet over medium-high heat. Cook marinated chicken for about 6–8 minutes until cooked through.
- Warm pitas on a griddle until soft.
