  • 1/2 teaspoon salt
  • 3 cups water
  • Zest and juice of 1 lemon
  • 1/8 teaspoon turmeric (optional)
  • 1 tablespoon chopped parsley (for garnish)

Instructions

  1. Rinse the rice under cold water in a fine mesh strainer until the water runs clear.
  2. In a medium pot, melt the butter over medium heat, then add the rinsed rice and salt. Toast for about 3 minutes, stirring occasionally.
  3. Add water, lemon zest, and lemon juice to the pot. Bring to a boil, then reduce heat to low and cover. Simmer for 15 minutes.
  4. Remove from heat but keep covered for an additional 5-10 minutes to allow the rice to steam.
  5. Fluff the rice with a fork and garnish with parsley before serving.
