  • 1 cup sour cream
  • 1 cup fresh raspberries
  • ¼ cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the crust by combining graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into the bottom of a springform pan and bake for 10 minutes. Let cool.
  3. In a mixing bowl, beat softened cream cheese until creamy. Gradually add sugar and mix well, then add eggs one at a time. Finally, blend in lemon juice, zest, and sour cream until smooth.
  4. For the raspberry swirl, cook raspberries with sugar, lemon juice, cornstarch, and water over medium heat until thickened. Cool slightly.
  5. Pour cheesecake filling into the cooled crust and dollop raspberry sauce on top; swirl gently with a spatula.
  6. Bake for about 60-70 minutes until slightly jiggly in the center. Cool in the oven for an hour before refrigerating for at least four hours.
