  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 tbsp fresh ginger, grated
  • Zest and juice of 1 lemon
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 cup jasmine or basmati rice
  • 1 cup coconut milk
  • 1/2 cup diced pineapple
  • 1/2 cup diced mango
  • 1/4 cup diced red onion
  • 1 tbsp lime juice
  • Fresh cilantro, chopped (optional)
  • Salt & pepper to taste

Instructions

  1. Rinse rice until clear; combine with coconut milk, water, and salt in a saucepan. Bring to a boil, then simmer for 15 minutes.
  2. In a mixing bowl, whisk together ginger, lemon zest, lemon juice, honey, soy sauce, olive oil, salt, and pepper. Add chicken; marinate for at least 10 minutes.
  3. Heat skillet over medium-high heat; cook marinated chicken until fully cooked (5-7 minutes each side).
  4. For the salsa, mix diced pineapple, mango, red onion, lime juice, cilantro (if using), salt, and pepper in a bowl.
  5. Serve cooked chicken over coconut rice topped with salsa.
