Ingredients

Scale
  • 2 cups granulated sugar
  • 1 cup heavy cream
  • ½ cup light corn syrup
  • ⅛ teaspoon salt
  • 1 teaspoon vanilla extract
  • Butter (for greasing)

Instructions

  1. Prepare your surface by generously buttering a marble slab or large baking sheet.
  2. In a heavy-bottomed saucepan, combine sugar, heavy cream, corn syrup, and salt. Cook over medium heat, stirring until the sugar dissolves. Attach a candy thermometer and stop stirring, cooking until it reaches 260°F (127°C).
  3. Pour the hot mixture onto the prepared slab and let cool for about 10–15 minutes.
  4. Once cool enough to handle, butter your hands and begin pulling the candy for 10–15 minutes until it lightens in color and becomes satin-like.
  5. Cut into bite-sized pieces using buttered scissors and place on wax paper to firm up at room temperature.
