  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp jerk seasoning
  • 1 ripe mango
  • 2 cups shredded cabbage (red and green)
  • 1/2 cup shredded carrots
  • 1/4 cup plain Greek yogurt
  • 2 tbsp honey
  • 1 tbsp lime juice

Instructions

  1. In a medium bowl, mix chicken cubes with olive oil, jerk seasoning, salt, and pepper. Marinate for at least 30 minutes.
  2. Heat a large skillet over medium-high heat and cook the marinated chicken for 6-8 minutes until charred and cooked through.
  3. In a large bowl, combine shredded cabbages, diced mango, carrots, and mix well.
  4. For the dressing, whisk together Greek yogurt, honey, lime juice in a small bowl.
  5. Assemble the bowls by dividing the slaw among four bowls and topping each with cooked chicken and honey lime dressing.
