Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp jerk seasoning
- 1 ripe mango
- 2 cups shredded cabbage (red and green)
- 1/2 cup shredded carrots
- 1/4 cup plain Greek yogurt
- 2 tbsp honey
- 1 tbsp lime juice
Instructions
- In a medium bowl, mix chicken cubes with olive oil, jerk seasoning, salt, and pepper. Marinate for at least 30 minutes.
- Heat a large skillet over medium-high heat and cook the marinated chicken for 6-8 minutes until charred and cooked through.
- In a large bowl, combine shredded cabbages, diced mango, carrots, and mix well.
- For the dressing, whisk together Greek yogurt, honey, lime juice in a small bowl.
- Assemble the bowls by dividing the slaw among four bowls and topping each with cooked chicken and honey lime dressing.
