  • 4 poblano peppers
  • 1 lb ground turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1/2 cup vegetable broth

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice tops off poblano peppers and remove seeds. Set aside.
  3. In a skillet over medium heat, sauté onions in olive oil until translucent. Add garlic and turkey; cook until turkey is no longer pink.
  4. Stir in cooked rice, cheddar cheese, cumin, chili powder, and vegetable broth. Mix well.
  5. Stuff each pepper with the filling and place upright in a baking dish. Cover with foil.
  6. Bake for 25–30 minutes until tender. Remove foil during the last few minutes for a golden topping.
