- 4 poblano peppers
- 1 lb ground turkey
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 2 tsp cumin
- 2 tsp chili powder
- 1/2 cup vegetable broth
Instructions
- Preheat oven to 375°F (190°C).
- Slice tops off poblano peppers and remove seeds. Set aside.
- In a skillet over medium heat, sauté onions in olive oil until translucent. Add garlic and turkey; cook until turkey is no longer pink.
- Stir in cooked rice, cheddar cheese, cumin, chili powder, and vegetable broth. Mix well.
- Stuff each pepper with the filling and place upright in a baking dish. Cover with foil.
- Bake for 25–30 minutes until tender. Remove foil during the last few minutes for a golden topping.
