  • 4 cloves fresh garlic, minced
  • 1/3 cup raw honey
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 2 tbsp freshly squeezed lime juice
  • 1 cup cooked rice or quinoa
  • 1 cup bell peppers, sliced (assorted colors)
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Marinate the chicken by mixing honey, chipotle peppers, garlic, lime juice, salt, and pepper in a bowl. Coat the chicken in the marinade and refrigerate for at least 1 hour.
