  • Egg wash: ¼ cup bread flour, 1 egg yolk, and 1 tablespoon heavy cream

Instructions

  1. Mix warm water and milk in a stand mixer; add yeast and let sit until frothy (about 5 minutes).
  2. Add sugar, flours, and salt; mix on medium speed until combined.
  3. Knead on low speed for about 5–7 minutes until smooth; let rise covered in a greased bowl until doubled (1–2 hours).
  4. While rising, prepare the butter layer by flattening cold butter between parchment paper into an 8-inch square; refrigerate.
  5. Roll out risen dough into a rectangle; encase the chilled butter and fold like a business letter. Refrigerate for 30 minutes and repeat this step two more times.
  6. Cut triangles from rolled-out dough; roll each triangle tightly from base to tip to shape croissants.
  7. Place on lined baking sheets; let rise for another hour while preheating oven to 400°F (200°C). Brush with egg wash before baking for about 20–24 minutes until golden brown.
