Ingredients
Scale
- 4 cups All-Purpose Flour
- 1 tablespoon Granulated Sugar
- 1 teaspoon Salt
- 1 tablespoon Instant Yeast
- 1 cup Cold Whole Milk (or Almond Milk)
- 1 cup Unsalted Butter
- 6 oz Chocolate Batons (or high-quality chocolate chips)
- 1 large Egg
- 1 tablespoon Milk (or Cream)
- 1 cup Confectioners' Sugar
Instructions
- In a large mixing bowl, combine flour, sugar, salt, and instant yeast. Gradually mix in cold milk until a soft dough forms. Knead gently until smooth.
- Wrap the dough in plastic wrap and refrigerate for about 30 minutes.
- While the dough chills, soften butter and mix with one tablespoon of flour to create a rectangular layer. Chill until firm.
- Roll out the chilled dough into a rectangle and place the butter layer in the center. Fold the edges over, roll out again, and fold into thirds; repeat this process two more times to create layers.
- Cut rolled dough into triangles, place chocolate batons at the wide ends, and roll tightly from base to tip.
- Place shaped croissants on lined baking sheets and let rise for about an hour.
- Preheat oven to 400°F (200°C). Brush tops with an egg wash made from beaten egg and milk before baking for 15–20 minutes or until golden brown.
