Ingredients
- 4 bell peppers (any color)
- 1 Tbsp olive oil
- 4 cups fresh spinach
- 1 tub (15 oz) ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- ½ cup sliced green onions
- ½ cup chopped fresh basil
- 2 large eggs
- ½ cup breadcrumbs
Instructions
- Preheat your oven to 400°F (204°C). Halve the bell peppers lengthwise, remove seeds and ribs, and place them cut-side up on a parchment-lined baking sheet. Brush with olive oil.
- Bake for about 20 minutes until slightly softened.
- In the meantime, microwave spinach for about 15 seconds until wilted. Chop it and combine with ricotta, mozzarella, parmesan, green onions, basil, eggs, breadcrumbs, salt, pepper, and herbs in a large bowl.
- Fill each pepper half generously with the ricotta mixture.
- Bake again at 350°F (176°C) for another 30 minutes or until golden brown.
