  • 1 3/4 cups whole wheat flour (or spelt flour)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9"x5" loaf pan with parchment paper or grease it lightly.
  2. In a large bowl, mash the bananas until smooth. Mix in the grated zucchini, egg, oil, syrup, cinnamon, baking powder, baking soda, and salt until combined.
  3. Gently fold in the flour using a spatula until just mixed—be careful not to overmix.
  4. Pour the batter into the prepared loaf pan and level it out.
  5. Bake for 50-60 minutes or until a toothpick comes out clean from the center.
  6. Allow cooling for about 10 minutes before transferring to a wire rack to cool completely before slicing.
