  • ¾ cup whole wheat flour (or gluten-free flour)
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp melted coconut oil (or unsalted butter)
  • 1 large egg
  • ¼ cup pure maple syrup
  • 6 tbsp unsweetened vanilla almond milk
  • ½ cup diced peaches

Instructions

  1. In a bowl, whisk together oats, flour, cinnamon, nutmeg, baking powder, and salt.
  2. In another bowl, mix melted coconut oil or butter with the egg and almond extract. Add maple syrup and almond milk; blend well.
  3. Combine dry ingredients with wet ingredients until just mixed. Fold in diced peaches and chill dough for 30 minutes.
  4. Preheat oven to 325°F (163°C). Line a baking sheet with parchment paper.
  5. Drop rounded scoops of dough onto the sheet, flatten slightly, and bake for 9-12 minutes until edges are golden.
  6. Cool on the pan before transferring to a wire rack.
