  • 2 ears corn (shucked and sliced)
  • 2 (4 oz) chicken or turkey cajun-style andouille sausage links
  • 1 lb large raw shrimp (peeled and deveined)
  • 6 Tbsp butter (diced)
  • 2 Tbsp fresh lemon juice
  • 2 tsp chopped fresh thyme
  • 2 cloves garlic (minced)
  • 2 tsp Old Bay seasoning

Instructions

  1. Preheat your grill to medium-high heat (425°F). Cut eight sheets of heavy-duty aluminum foil measuring 12 by 14 inches.
  2. Microwave the potatoes on high for about 3 minutes until slightly tender. Let cool and cut into slices.
  3. Assemble packets by dividing potatoes, corn, sausage, and shrimp onto each double-lined foil sheet.
  4. Melt butter in a microwave-safe dish and mix in lemon juice, thyme, and garlic. Drizzle over the ingredients in each packet.
  5. Season with Old Bay seasoning and seal the packets tightly.
  6. Grill sealed side up for 12-15 minutes until shrimp is cooked through.
