Ingredients

  • 1.5 lbs salmon fillets (cut into 1-inch squares)
  • 2 large lemons (thinly sliced)
  • 2 Tbsp parsley (freshly chopped)
  • 2 large garlic cloves (pressed)
  • 1/2 Tbsp Dijon mustard
  • 1/2 tsp salt
  • 1/8 tsp ground black pepper
  • 2 Tbsp light olive oil
  • 2 Tbsp fresh lemon juice

Instructions

  1. Soak bamboo skewers in water for at least 1 hour to prevent burning.
  2. Preheat grill to medium heat (375°F).
  3. In a medium bowl, mix parsley, garlic, Dijon mustard, salt, pepper, olive oil, and lemon juice to create the marinade.
  4. Double skewer pieces of salmon and folded lemon slices onto two skewers at a time. Brush both sides with the marinade.
  5. Lightly oil the grill grates and place the skewers on the hot grill.
