- 2 large chicken breasts
- 1 ripe pineapple
- 1 tbsp olive oil for chicken
- 1 tbsp olive oil for pineapple

- 1 tsp garlic powder for chicken
- 1/2 tsp red pepper flakes for chicken
- 5 cups chopped romaine lettuce
- 1/2 red onion
- 1/2 cucumber
- 1 cup cherry tomatoes
- 1 avocado
- 1/4 cup extra virgin olive oil for dressing
- 1/4 cup lime juice
- 2 tbsp honey
- 1 tsp garlic powder for dressing
- 1 tsp pink sea salt for dressing
- 1/2 tsp black pepper for dressing
- 1/2 tsp red pepper flakes for dressing
Instructions
- Cut the pineapple into rings and brush with olive oil. Season chicken breasts with olive oil, salt, pepper, thyme, garlic powder, and red pepper flakes.
- Preheat the grill to medium-high heat. Grill chicken for about 7 minutes on each side and pineapple for 3-4 minutes on each side until caramelized.
- While grilling, chop the romaine lettuce, slice the onion and cucumber, halve the cherry tomatoes, and slice the avocado.
- Whisk together dressing ingredients in a bowl: olive oil, lime juice, honey, garlic powder, salt, pepper, and red pepper flakes.
- Once grilled, slice chicken and layer all salad ingredients in a large bowl. Toss with dressing before serving.
