Ingredients
- 4 boneless chicken thigh fillets
- 3 tablespoons olive oil
- 100 ml lime juice
- 1/2 yellow bell pepper
- 1/2 red bell pepper
- 1/2 onion
- 5 cups Romaine lettuce
- 2 avocados
- Fresh cilantro
- 2 tablespoons cilantro (chopped)
- 2 cloves garlic (crushed)
- 1 teaspoon brown sugar
- 3/4 teaspoon red chili flakes
- 1/2 teaspoon ground cumin
- 1 teaspoon salt
Instructions
- In a bowl, whisk together olive oil, lime juice, chopped cilantro, crushed garlic, brown sugar, chili flakes, cumin, and salt to create the marinade.
- Marinate chicken thighs in half of the mixture for at least two hours.
- Grill marinated chicken on medium-high heat until cooked through and golden brown. Set aside to rest.
- In the same pan, sauté sliced bell peppers and onion until tender.
- Slice rested chicken and combine with Romaine lettuce, avocado slices, grilled veggies, and remaining marinade before serving.
