  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 sweet potato, peeled and cubed
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup plain Greek yogurt
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your grill to medium-high heat. Season the chicken pieces with garlic powder, onion powder, salt, and black pepper. Grill each piece for about 2-3 minutes on each side until fully cooked through.
  2. Preheat your oven to 400°F (200°C). In a mixing bowl, toss together sweet potato cubes, zucchini slices, and red onion wedges with olive oil, garlic powder, onion powder, salt, and pepper. Spread the mixture evenly on a baking sheet. Roast in the preheated oven for 20-25 minutes until they are tender-crisp.
  3. In a small bowl, whisk together Greek yogurt, chopped cilantro, lime juice, minced garlic, salt, and black pepper until well combined.
  4. Divide the roasted vegetables among serving bowls. Top each bowl generously with grilled chicken pieces. Finally, drizzle with the cilantro lime dressing before serving.
