- 1/4 cup fresh lime juice
- 1/4 cup olive oil

- 1 1/2 tsp ancho chili powder
- Salt and pepper to taste
- 12 mini corn taco shells (warmed)
- 1 large avocado (cored and sliced)
- 1 small red or yellow onion (chopped)
- 3 Tbsp chopped cilantro
- Lime wedges (for serving)
Instructions
- 1. Marinate the chicken by combining lime juice, olive oil, garlic, cumin, chili powder, salt, and pepper in a resealable bag. Add the chicken and let it marinate in the refrigerator for at least one hour.
- 2. Preheat your grill to medium-high heat (425 – 450°F).
- 3. Grill the marinated chicken for about 5 – 6 minutes on each side until cooked through.
- 4. Allow the grilled chicken to rest before dicing it into cubes.
- 5. Assemble tacos by placing diced chicken in warmed corn tortillas and topping with avocado slices, chopped onions, and cilantro.
