  • 1 1/2 tsp ancho chili powder
  • Salt and pepper to taste
  • 12 mini corn taco shells (warmed)
  • 1 large avocado (cored and sliced)
  • 1 small red or yellow onion (chopped)
  • 3 Tbsp chopped cilantro
  • Lime wedges (for serving)

Instructions

  1. 1. Marinate the chicken by combining lime juice, olive oil, garlic, cumin, chili powder, salt, and pepper in a resealable bag. Add the chicken and let it marinate in the refrigerator for at least one hour.
  2. 2. Preheat your grill to medium-high heat (425 – 450°F).
  3. 3. Grill the marinated chicken for about 5 – 6 minutes on each side until cooked through.
  4. 4. Allow the grilled chicken to rest before dicing it into cubes.
  5. 5. Assemble tacos by placing diced chicken in warmed corn tortillas and topping with avocado slices, chopped onions, and cilantro.
