  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 clove garlic, minced

  • 1/4 teaspoon red pepper flakes, optional
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • 1/4 teaspoon salt
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1/2 teaspoon sriracha, optional
  • 1 tablespoon water

Instructions

  1. Marinate the chicken in soy sauce, honey, lime juice, minced garlic, ground ginger, and red pepper flakes for at least 30 minutes.
  2. Cook jasmine rice with coconut milk and water in a saucepan until tender.
  3. Thread marinated chicken onto skewers and grill over medium heat until fully cooked.
  4. Whisk together peanut butter, soy sauce, lime juice, honey, sriracha (if desired), and water to create the peanut sauce.
  5. Serve the grilled chicken over coconut rice and drizzle with peanut sauce.
