  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon chopped cilantro
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked rice
  • Sesame seeds, for garnish
  • Chopped green onions, for garnish

Instructions

  1. In a bowl, combine cubed chicken with olive oil, paprika, garlic powder, salt, pepper, and optional cayenne. Toss until coated.
  2. In another bowl, mix sliced zucchini and diced sweet potato with olive oil, paprika, garlic powder, salt, and pepper.
  3. Preheat grill or grill pan over medium heat; grill chicken for 2-3 minutes per side until cooked through. Grill vegetables until tender.
  4. For the sauce, whisk together mayonnaise, sour cream, cilantro, lemon juice, minced garlic, salt, and pepper in a small bowl.
  5. Assemble bowls by placing cooked rice at the bottom; top with grilled chicken and roasted vegetables. Drizzle with sauce and garnish as desired.
