- 1 zucchini, sliced
- 1 sweet potato, peeled and diced
- 1 tablespoon olive oil

- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon chopped cilantro
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked rice
- Sesame seeds, for garnish
- Chopped green onions, for garnish
Instructions
- In a bowl, combine cubed chicken with olive oil, paprika, garlic powder, salt, pepper, and optional cayenne. Toss until coated.
- In another bowl, mix sliced zucchini and diced sweet potato with olive oil, paprika, garlic powder, salt, and pepper.
- Preheat grill or grill pan over medium heat; grill chicken for 2-3 minutes per side until cooked through. Grill vegetables until tender.
- For the sauce, whisk together mayonnaise, sour cream, cilantro, lemon juice, minced garlic, salt, and pepper in a small bowl.
- Assemble bowls by placing cooked rice at the bottom; top with grilled chicken and roasted vegetables. Drizzle with sauce and garnish as desired.
