  • 1 yellow bell pepper (chopped)
  • ½ large red onion (wedged)
  • 1 pint cherry or grape tomatoes
  • ½ cup kalamata olives (pitted)
  • ¼ cup feta cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, Dijon mustard, salt, and black pepper.
  3. Marinate chicken thighs in two-thirds of the marinade for 10 to 15 minutes.
  4. On a baking sheet, arrange sliced zucchini, chopped bell pepper, onion wedges, and tomatoes. Drizzle with remaining marinade.
  5. Nestle marinated chicken among the vegetables and bake for about 30 minutes.
  6. Sprinkle olives and feta on top; return to the oven for an additional 10 to 15 minutes until fully cooked.
  7. Garnish with chopped parsley before serving.
