Ingredients

  • 8 pieces of chicken
  • 4 medium-sized potatoes
  • 100 ml lemon juice
  • 100 ml olive oil
  • 5 cloves garlic
  • 1 large onion
  • 1 tbsp fresh rosemary
  • 1.5 tbsp honey
  • 1.5 tbsp mustard
  • salt
  • pepper
  • oregano
  • paprika

Instructions

  1. Preheat your oven to 175 degrees Celsius (fan forced).
  2. Place chicken skin side up in a lined baking dish.
  3. Cut potatoes into desired thickness and add them alongside the chicken.
  4. Season both chicken and potatoes with salt, pepper, oregano, and paprika.
  5. Flip the chicken to skin side down; season again on this side.
  6. Blend lemon juice, olive oil, garlic, onion, rosemary, honey, and mustard until smooth.
  7. Pour half the marinade over the chicken and potatoes; flip chicken back to skin side up.
  8. Pour remaining marinade on top of the chicken.
  9. Cover with wet baking paper followed by aluminum foil; bake for 90 minutes.
  10. Uncover and bake for an additional 30 minutes or until desired color is achieved.
  11. Let rest for 10 minutes before serving.
