Ingredients
- 8 pieces of chicken
- 4 medium-sized potatoes
- 100 ml lemon juice
- 100 ml olive oil
- 5 cloves garlic
- 1 large onion
- 1 tbsp fresh rosemary
- 1.5 tbsp honey
- 1.5 tbsp mustard
- salt
- pepper
- oregano
- paprika
Instructions
- Preheat your oven to 175 degrees Celsius (fan forced).
- Place chicken skin side up in a lined baking dish.
- Cut potatoes into desired thickness and add them alongside the chicken.
- Season both chicken and potatoes with salt, pepper, oregano, and paprika.
- Flip the chicken to skin side down; season again on this side.
- Blend lemon juice, olive oil, garlic, onion, rosemary, honey, and mustard until smooth.
- Pour half the marinade over the chicken and potatoes; flip chicken back to skin side up.
- Pour remaining marinade on top of the chicken.
- Cover with wet baking paper followed by aluminum foil; bake for 90 minutes.
- Uncover and bake for an additional 30 minutes or until desired color is achieved.
- Let rest for 10 minutes before serving.
