  • 2 large bell peppers
  • ½ cup feta cheese
  • 1 small red onion
  • 2 cloves garlic
  • 1 zucchini
  • ⅔ cup uncooked white rice
  • Kalamata olives
  • Fresh dill

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook rice as per package instructions. Slice bell peppers in half lengthwise and remove seeds.
  3. In a skillet, heat olive oil over medium heat. Add ground chicken, salt, and pepper; cook until no longer pink.
  4. Stir in diced onion, garlic, zucchini, Italian seasoning, and cook briefly.
  5. In a bowl, combine cooked rice with the chicken mixture and add olives, tomatoes, feta cheese, and dill.
  6. Stuff the pepper halves with the mixture; place in a baking dish with water at the bottom.
  7. Cover with foil and bake for 40-45 minutes until tender. Serve warm with lemon wedges.
