  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips
  • 1/2 cup Reese’s Pieces

Instructions

  1. Prepare the cheesecake filling by mixing cream cheese, powdered sugar, and vanilla until smooth. Scoop dollops onto parchment paper and freeze for at least an hour.
  2. For the cookie dough, beat together softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and extra vanilla extract.
  3. In another bowl, combine flour, baking soda, and salt; gradually mix into the wet ingredients. Fold in chocolate chips and Reese’s Pieces.
  4. Take about two tablespoons of cookie dough, flatten it, place a frozen cheesecake dollop in the center, cover with more dough, and seal edges.
  5. Bake on a parchment-lined sheet at 350°F (175°C) for 12-14 minutes until golden brown around the edges.
