Description

  • 5 cups all-purpose flour
  • 1/2 cup sugar
  • 2.5 tsp salt
  • 1/4 cup sourdough starter
  • 1 cup water
  • 1/2 cup milk
  • 12.5 oz unsalted butter (divided)
  • 1/2 tsp almond essence
  • 4 tbsp pistachio paste
  • Egg yolk (for brushing)

Instructions

  1. In a stand mixer, combine flour, sugar, salt, sourdough starter, water, milk, melted butter, almond essence, and yeast until a dough forms. Knead for about 10 minutes until smooth.
  2. Wrap the dough in plastic wrap and refrigerate for at least 6 hours or overnight.
  3. For the butter layer, pound cold unsalted butter between parchment sheets into a rectangle and refrigerate until firm.
  4. Roll out chilled dough into a large rectangle and place the chilled butter layer in the center. Fold sides over the butter like an envelope.
  5. Roll out again and fold into thirds; repeat this process two more times for layering.
  6. Cut triangles from the final rolled-out dough and shape them into croissants by rolling from base to tip.
  7. Prepare the cream filling by cooking milk, sugar, cornstarch, egg yolks, vanilla essence, salt, and pistachio paste in a saucepan until thickened.
  8. Brush each croissant with egg yolk mixed with cream before filling with cooled pistachio cream.
  9. Bake at 375°F (190°C) for about 25 minutes or until golden brown.
