- ¾ cup un-sulphured or dark molasses
- ½ cup unsalted butter
- 2⅔ cup flour
- 2 tsp ground ginger
- 1½ tsp baking soda
- 1½ tsp ground cinnamon
- ½ tsp ground cloves
- ¼ tsp ground nutmeg
- ¼ tsp salt
- ½ cup brown sugar
- ½ cup sour cream or plain yogurt
- ½ cup whole milk
- 1 large egg
- Coarse sugar for sprinkling
- ½ cup powdered sugar
- 1–2 tbsp fresh squeezed lemon juice
- 1–2 tbsp milk
- ½ tsp vanilla extract
Instructions
- Preheat your oven to 425°F and prepare a muffin tray with cooking spray.
- In a large bowl, combine molasses and butter; microwave until melted, then mix well and allow to cool.
- In another bowl, whisk together flour, spices, baking soda, and salt.
- Combine the molasses mixture with brown sugar, sour cream, milk, and egg; mix until smooth.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Fill each muffin cup to the top with batter and sprinkle with coarse sugar.
- Bake for 5 minutes at 425°F, then reduce the temperature to 350°F for an additional 11–14 minutes or until a toothpick comes out clean.
- Cool in the pan briefly before transferring to a wire rack.
- Prepare the lemon glaze by mixing powdered sugar with lemon juice; drizzle over cooled muffins.
