  • 1 cup brown sugar (packed)
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/3 cup molasses
  • 1/3 cup white sugar (or coarse sugar)
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup vegan marshmallows cream
  • 1/4 teaspoon salt
  • 11 1/2 cup powdered sugar
  • 1 tablespoon milk or cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, combine flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt.
  3. In another bowl, cream together softened butter and brown sugar until fluffy. Add egg, vanilla extract, and molasses; mix until smooth.
  4. Gradually add dry ingredients to the wet mixture until just combined.
  5. Scoop dough onto prepared baking sheets about 2 inches apart.
  6. Bake for about 10 minutes or until edges are set but centers remain soft. Allow cooling on wire racks.
  7. For frosting: Beat softened butter and vegan marshmallow cream together; gradually add powdered sugar to desired consistency.
  8. Once cookies are cool, spread frosting on one cookie and sandwich with another.
