  • 1 lb raw shrimp (peeled and deveined)
  • 2 tablespoons olive oil or avocado oil
  • 2 tablespoons lime juice (about 1 large lime)
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper (more if you want it spicier)
  • 2 tablespoons fresh chopped cilantro
  • 2 cups uncooked white rice (Minute Rice preferred; quinoa or brown rice also works)
  • 1/4 cup diced red onion
  • 1/2 cup diced cherry tomatoes
  • 1 jalapeno (sliced, optional)
  • 1 large avocado (sliced)
  • 1 (15 ounce) can fire roasted corn (drained)

Instructions

  1. In a medium mixing bowl, combine the olive oil, lime juice, smoked paprika, cumin, chili powder, garlic powder, salt, black pepper, cayenne pepper, and chopped cilantro. Pat the shrimp dry with paper towels. Add them to the marinade and toss until fully coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for 15 minutes.
  2. Cook your rice according to package instructions. If using Minute Rice, it will cook quickly—just follow the directions on the box. Once cooked, fluff the rice with a fork and set aside.
  3. Heat a large skillet over medium-high heat. No additional oil is needed as it's already in the marinade. Add marinated shrimp in an even layer to the hot skillet. Cook for 2–3 minutes without stirring until they turn opaque on one side. Flip each shrimp over using tongs or a spatula and cook for another 2–3 minutes until fully cooked through.
  4. Add cooked shrimp to your assembled rice bowls. Top each bowl with diced red onion, cherry tomatoes, sliced jalapeno (if using), avocado slices, fire-roasted corn, and more fresh cilantro as desired. Drizzle with creamy jalapeno ranch or cilantro ranch dressing before serving.
