Ingredients

  • 2 cups rolled oats
  • 1 scoop (30g) plant-based protein powder
  • 1 cup mixed fresh or frozen berries (strawberries, blueberries, raspberries)
  • 1 ripe banana, mashed
  • 2 tbsp pure maple syrup
  • 1/2 cup unsweetened almond milk
  • 1 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix rolled oats, protein powder, baking powder, and salt.
  3. In another bowl, mash the banana and mix in almond milk and maple syrup until well combined.
  4. Pour the wet ingredients into the dry mixture and stir until just combined. Gently fold in the berries.
  5. Grease a muffin tin or line it with paper liners. Fill each cup about three-quarters full with the batter.
  6. Bake for 20-25 minutes until golden brown on top. Let cool for five minutes before transferring to a wire rack.
