- 2 cups rolled oats
- 1 scoop (30g) plant-based protein powder
- 1 cup mixed fresh or frozen berries (strawberries, blueberries, raspberries)
- 1 ripe banana, mashed
- 2 tbsp pure maple syrup
- 1/2 cup unsweetened almond milk
- 1 tsp baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix rolled oats, protein powder, baking powder, and salt.
- In another bowl, mash the banana and mix in almond milk and maple syrup until well combined.
- Pour the wet ingredients into the dry mixture and stir until just combined. Gently fold in the berries.
- Grease a muffin tin or line it with paper liners. Fill each cup about three-quarters full with the batter.
- Bake for 20-25 minutes until golden brown on top. Let cool for five minutes before transferring to a wire rack.
