  • 1 cup long-grain rice
  • 2 cups low-sodium chicken broth
  • 4 cloves fresh garlic (minced)

  • 2 tbsp olive oil
  • 1/4 cup reserved pasta water (or as needed)
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  2. In a saucepan, combine rice and chicken broth; bring to a boil, then cover and simmer for 15-20 minutes until liquid is absorbed.
  3. Heat olive oil in a skillet over medium-high heat. Season the chicken with salt and pepper; sear for about 6 minutes per side until golden brown and cooked through.
  4. Remove the chicken; lower heat, add minced garlic to the same skillet, cooking until fragrant (about 1 minute). Stir in heavy cream and reserved pasta water.
  5. Add oregano; let simmer for about 5 minutes or until slightly thickened.
  6. Fluff rice and serve in bowls topped with sliced chicken and creamy garlic sauce.
