- 5 large egg yolks

- ⅛ teaspoon sea salt
Instructions
- Infuse the milk: Split the vanilla bean and scrape out seeds. Combine the vanilla pod, seeds, Earl Grey tea, and milk in a saucepan over medium heat. Bring to a boil, then remove from heat and steep for 10 minutes. Strain to discard solids.
- Preheat your oven to 160°C (320°F) and prepare a water bath by boiling water.
- Mix the custard: In a bowl, whisk together egg yolks and sugar until smooth. Stir in infused milk mixture and salt.
- Bake: Pour custard into ramekins placed in a baking tray. Fill the tray with boiling water halfway up the sides of ramekins. Bake for 25-30 minutes until set but still jiggly.
- Cool: Remove ramekins from the water bath; let cool at room temperature then refrigerate for at least three hours.
- Caramelize: Before serving, sprinkle sugar on top and use a kitchen torch or broiler until melted and golden.
