Description

Dill Pickle Pasta Salad is a delightful and refreshing dish that brings together the tangy taste of dill pickles with creamy dressing, making it an ideal choice for summer gatherings.


Ingredients

  • 8 ounces elbow pasta
  • 1/2 cup dill pickle juice
  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 cup cheddar cheese (diced)
  • 1 cup sliced dill pickles
  • 3 tablespoons fresh dill (chopped)
  • 3 tablespoons white onion (finely chopped)

Instructions

  1. Cook the elbow pasta in boiling salted water until al dente, then drain and rinse under cold water.
  2. In a mixing bowl, combine cooked pasta with half of the dill pickle juice and let sit for 5 minutes before draining excess liquid.
  3. In another bowl, mix mayonnaise, sour cream, remaining pickle juice, Sriracha, salt, and black pepper until smooth.
  4. In a serving bowl, combine drained pasta, diced cheese, sliced pickles, chopped dill, and onion. Pour dressing over and gently toss to coat.
  5. Cover and refrigerate for 4-6 hours before serving to allow flavors to meld.
