- 8 ounces elbow pasta
- 1/2 cup dill pickle juice
- 2/3 cup mayonnaise
- 1/3 cup sour cream
- 1 cup cheddar cheese (diced)
- 1 cup sliced dill pickles
- 3 tablespoons fresh dill (chopped)
- 3 tablespoons white onion (finely chopped)
Instructions
- Cook the elbow pasta in boiling salted water until al dente, then drain and rinse under cold water.
- In a mixing bowl, combine cooked pasta with half of the dill pickle juice and let sit for 5 minutes before draining excess liquid.
- In another bowl, mix mayonnaise, sour cream, remaining pickle juice, Sriracha, salt, and black pepper until smooth.
- In a serving bowl, combine drained pasta, diced cheese, sliced pickles, chopped dill, and onion. Pour dressing over and gently toss to coat.
- Cover and refrigerate for 4-6 hours before serving to allow flavors to meld.
