  • 1 medium Red Bell Pepper
  • 1 cup Pineapple Juice
  • 1 tablespoon Low-Sodium Soy Sauce
  • 2 tablespoons Honey
  • 1 tablespoon Rice Vinegar
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ginger (freshly grated)
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water

Instructions

  1. Prepare all ingredients: chop red bell pepper, mince garlic, and grate ginger.
  2. Heat olive oil in a skillet over medium heat. Add seasoned chicken; cook until golden brown on both sides (about 5–7 minutes per side).
  3. Add chopped red bell pepper; sauté for 2–3 minutes until softened.
  4. In a mixing bowl, whisk together pineapple juice, soy sauce, honey, rice vinegar, garlic, ginger, cornstarch, and water until smooth. Pour over chicken and bell peppers.
  5. Cook for an additional 5–7 minutes until the sauce thickens slightly.
