  • 4 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 2 teaspoons instant yeast
  • 1 cup cold whole milk
  • 1 cup unsalted butter (for dough)
  • 8 ounces chocolate batons or semi-sweet chocolate
  • 1 large egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. In a large mixing bowl, combine flour, sugar, salt, and yeast. Gradually mix in the cold milk until a dough forms.
  2. Knead lightly until smooth, cover with plastic wrap, and chill in the fridge for 30 minutes.
  3. Roll out half of the cold butter into an 8-inch square between two sheets of parchment paper.
  4. Roll out your dough into a larger rectangle; encase the butter square completely by folding the dough over.
  5. Roll out again into a long rectangle and fold into thirds like a letter; repeat this process two more times, chilling between folds.
  6. Roll out final dough to about ¼ inch thick and cut triangles; place chocolate batons at the wide end and roll up tightly towards the point.
  7. Place rolled croissants on parchment-lined baking sheets and let them rise until doubled.
  8. Preheat oven to 400°F (200°C) and bake for about 20 minutes until golden brown.
