Instructions
- In a large mixing bowl, combine flour, sugar, salt, and yeast. Gradually mix in the cold milk until a dough forms.
- Knead lightly until smooth, cover with plastic wrap, and chill in the fridge for 30 minutes.
- Roll out half of the cold butter into an 8-inch square between two sheets of parchment paper.
- Roll out your dough into a larger rectangle; encase the butter square completely by folding the dough over.
- Roll out again into a long rectangle and fold into thirds like a letter; repeat this process two more times, chilling between folds.
- Roll out final dough to about ¼ inch thick and cut triangles; place chocolate batons at the wide end and roll up tightly towards the point.
- Place rolled croissants on parchment-lined baking sheets and let them rise until doubled.
- Preheat oven to 400°F (200°C) and bake for about 20 minutes until golden brown.
